Was it just me who didn't realise that Sony North America fucked up the translation of her name... and called her Aeris instead of Aerith...?...

Well, since development teams work on different parts of a game at once it was probably something that was added in before they finalized her fate. It could've just been a remnant that they decided to leave in.

You need to get a green or black chocobo, talk to some guy for a piece of mythril and go take the mythril somewhere. You can get the mythril as soon as you're able to raise chocobo I think.
