Overall the VS series and SF are the best, because their battle mechanics are the greatest, they are the most fun to play, they have the coolest line-up of characters and Capcom is awesome with animation and special effects. The only problem is that their games lacks content and story. Which is too bad considering that SF have so much potential story wise. Just look at the SF mangas. They are very good to the point that Capcom have taken some characters from those mangas and added them into the series.

After those 2, i think Tekken and Soul Calibur follows. I think of these 2 as the best of the 3D fighting game, because they alway have great graphics, the control scheme is very simple, superb animation considering the characters have over 60 moves, great content, character creation and roster edit, the characters designs actually fit with each fighting style.

Althought I haven't played any Tekken game after Tekken 4, I think I enjoyed the Tekken series most.

Best and most technical fighting game I've played is DOA4 though. Which at first sight may look like a boob bouncing simulator, but the game is actually very technical. Not your average buttonmasher. There are many different countering options and self constructible combos. All the moves blend into eachother seamlessly and the game has some of the most ridiculous throws. Just watch these tag throws.
