You could think of 'grain' two ways. Grain is a very small particle. So it's like he's saying, down to the last inch of him he's a rebel. The word grain also has the definition of being one's basic nature.

Saying "I'm mad vexed is what the projects made me" doesn't make sense sentence wise compared to "A man vexed, is what the projects made me." But that's just nit picking. He is saying he's vexed though.
